Winter is the best time to harvest olives. Most of the fruit is now black and fully ripe, with only a few green olives remaining, mainly inside the canopy. The oil extracted at this stage has a sweeter, more delicate flavour and retains all the organoleptic characteristics of perfectly ripened olives.
